Most of them, it just isn't always consensual Most industrialists will pvp at some point in their lives, either just to try it out or to see what the fuss is about. Many will continue to pvp, some will never do it again. I was the former.

ECCM (not remote ECCM) or backup sensor arrays help against targeting sensor jamming, however i am not sure if CCP ever made it so those help against npc jamming. They will help against player jamming though.

Every POS shoot I have ever been on they kept anything that is silo/hanger/lab to see if repackaging it would cause anything to drop. I do recall shooting a silo and it dropping a can, and so we grabbed the stuff. But my memory is a bit unreliable.
